Madame Ellen felt that this cab driver was taking too much for granted given that she was a good customer and she always tipped him. She had asked him to pick her up and he delayed. She was so pissed at him that she made him eat her shit so that he never took anything else for granted again. The shit was like a reset button for the cab driver.
Madame Ellen was not going to let this guy continue being unruly. She expected him to learn that being unruly was not going to work and that he would only bring herself into more and more problems. That is why she chose to shit on him so that he learned and he realized that she meant what she said and that he had only himself to blame for what happened to him.
Madame Ellen had no time for snitches and when she realized that this guy was a snitch, she had to torture him in a way he deserved to be so that he would not only learn that it was not ok to snitch on other people, but that he would also stop doing it. And after he ate her shit and drank her pee, he never snitched on anyone again.
